1 1/2 c. carrots, grated


3 tbsp. onion, grated


3 c. bread crumbs


3/4 tsp. baking powder


2 eggs, beaten


1/4 c. milk


1/2 tsp. salt


1/8 tsp. pepper


3 tbsp. butter or bacon fat





Combine all ingredients except butter. Mix well. Form into patties, about 3" diameter. Makes about 12. Heat butter or bacon fat in a skillet, brown lightly on both sides. Serves 6.

INGREDIENTS


1 pound carrots, grated


1 clove garlic, minced


4 eggs


1/4 cup all-purpose flour


1/4 cup bread crumbs or matzo meal


1/2 teaspoon salt


1 pinch ground black pepper


2 tablespoons vegetable oil


DIRECTIONS


In a medium size mixing bowl, combine the grated carrots, garlic, eggs, flour, bread crumbs, salt and black pepper; mix well.


Heat oil in a frying pan over medium-high heat. Make the mixture into patties, and fry until golden brown on each side.
