Looking for the name of a french creampuff cake?
I think you are talking about a cake made with profiteroles called a croquembouche. they actually call this type of cake a pi猫ce mont茅e (mounted pieces in French) because you make it by assembling those delicious little profiterole puffs. but the actual name is a Croquembouche and it is often served at weddings in France. profiteroles are also used as the outer wall of G芒teau St-Honor茅s. Yummmm!

It's a bunch of cream puffs "glued" together with caramel and it's stacked into a cylindrical tower of sorts

It means "crunch in the mouth".
